Lemon Angel Pie Recipe

4 egg whites (beaten still stiff but not dry)
1/4 tsp. Cream of Tartar

C. sugar
4 egg yolks
1/2 C. Sugar
3T. Lemon Juice
1 tsp.Grated Lemon rind
1/2 tsp. Salt

1 C. Whipped heavy cream

Directions:
Directions:
Beat egg whites until they are stiff, but not dry. Add in cream of tartar.
Gradually beat in the sugar.
Spread in a 10" pie plate
Bake for 1 hour in a 275º oven.

In a double boiler - add 4 egg yolks, 1/2 C sugar, lemon juice, lemon rind and salt., cook mixture until it reaches a thick consistency. Cool.
Fold in the 1 C. whipped cream.
Let set for 24 hours in the frig.
Cover entire pie with additional whipped cream.
