olive oil
4 spicy Italian sausage links, casing removed
1 large onion, quartered and sliced thin
1 1/2 tsp. salt
1 tsp. Italian seasoning
1/2 tsp. pepper
1 lb. mushrooms
3 cloves garlic, pressed
1/2 c. wine, white
1 (28oz) can diced tomatoes with juice
2 tbsp. parley, chopped

Directions:
Directions:
In a dutch oven add olive oil and then crumble the sausage into the pan. Brown and remove from pot to a bowl to hold. Add onions and stir for 5 minutes. Add salt, Italian seasoning, and pepper. Stir to combine. Add mushrooms and saute for 2 minutes. Add garlic and wine. Allow wine to reduce until almost completely gone. Add tomatoes and put the sausage back Simmer for 4 minutes. Turn off heat and drizzle 2 tbsp. olive oil into the sauce. Add parsley and basil, stir. Add noodles (I use broken flat noodles) to the sauce and stir to coat.
