3 c. sugar
1 c. brown sugar
3/4 c. corn starch
1 1/2 t. cinnamon
1/2 t. nutmeg
2 t. salt
2 T. lemon juice
10 c. water
1/2 t. apple cider vinegar per quart jar
8 quart jars
~15 lbs. peaches or apples, skinned, cored, and sliced

Directions:
To expedite skinning of peaches, drop in boiling water for 1 minute, then transfer to ice water. Skins should slide off. Sterilize quart jars and pack in fruit to within 1 inch of the top. Add apple cider vinegar to each jar. Combine dry ingredients in sauce pan. Add water, stirring constantly to avoid lumps. Bring to a boil and allow to boil until mixture thickens slightly and looks transparent, approximately 20 minutes. Remove from heat and stir in lemon juice. Immediately ladle hot syrup into jars to within 1 inch of the lip. Use a spatula to work air bubbles free and refill as necessary. Apply lids and bands and process in a boiling water bath (completely submerged in water) for 25 minutes.
