2 cups all purpose flour
1 cup powdered sugar
2 sticks butter, room temperature

Filling:
4 eggs, beaten
2 cups sugar
6 tbsp. freshly squeezed lemon juice
6 tbsp. flour
1/2 tsp. vanilla extract

Directions:
Directions:
Mix the 2 cups of flour, 1 cup powdered sugar and 2 sticks of butter until crumbly. Press into a 9x13" baking dish, including half way up the sides of the dish. Bake in a preheated 350º oven for 20 minutes. Remove and set aside.

For the filling, mix the remainder of the ingredients and pour over the baked crust. Bake an additional 25 minutes. Let cool at least 10 to 15 minutes, then lightly dust with powdered sugar. Cut into squares to serve.

I have tried a number of lemon bar recipes, and this is by far the best there is! It's one of Paula Deen's recipes. Note: To get the most juice from your lemons, cut them in half, put them in a bowl, and microwave for 20 seconds, then squeeze.
