Ingredients: 1 1/2 cups flour 1 Tablespoon sugar 2 teaspoons baking powder 1/2 teaspoon cinnamon 1 1/4 cups milk 1/2 cup banana, mashed (2 small) 1 egg, lightly beaten 1 teaspoon vanilla 1/2 cup chocolate chips Butter for pan

Directions:Combine flour, sugar, baking powder and cinnamon in a large bowl. After mixing well stir in milk, banana, egg and vanilla. Fold in chocolate chips. Heat a griddle on medium heat. Add small pat of butter. Pour batter onto griddle making 3 inch rounds.
Cook about two minutes or until tops are bubbly. Flip pancake and cook for another minute or until golden. |

Notes: These are William and Charlotte's favorite pancakes. If you have enough ripe bananas, it's worth it to make a double batch and freeze several pancakes to heat in the toaster for breakfast during the week. If you want to make these a bit healthier, you can substitute whole wheat flour and omega 3 eggs. The pancakes are so sweet, you really don't notice the difference in the flour.
