2 onions
1 bell pepper
garlic
Whole cut up chicken (or legs and boneless thighs give a great taste, about 6 of each)
green onions
salt
red pepper

Directions:
First you start with a roux.....Mom's favorite start to most dishes. Today, we are lucky enough to have roux ready made in a jar. Kary's Roux out of Ville Platte is the best. If you need to make your own, just look it up online. Add the onions, bell pepper, and garlic to the roux and cook until they are softened. Be sure not to let the roux burn and stick to the bottom of the pot. Mom always said to start over if it burns. Then add chicken pieces that have been seasoned with salt and red pepper. Cover and cook over a low-medium heat for about 30 minutes, it will begin to make a gravy. Then add water, about 3-4 cups, just to get a nice gravy. Add salt and red pepper to taste. You can always add a little more roux to thicken the gravy if needed. Add a few green onions and let simmer for an hour. Serve over rice.
