2 cups all-purpose flour
1 cup sugar, plus 1 tablespoon
2 tsp. baking powder
1/2 tsp. salt
1/2 cup milk
1/2 cup lightly salted butter, melted and cooled
1 egg, slighly beaten
1 tsp. vanilla extract
2 cups blueberries, fresh or frozen, thawed and drained

Preheat oven to 400 deg F. Grease 12 muffin cups.

1. In a large bowl, stir together flour, 1 cup sugar, baking powder, and salt. In another bowl, stir together milk, butter, egg, and vnilla until blended. Make a well in the center of the dry ingredients; add milk mixture and stir just to combine. Mash 1/4 cup blueberries and stir into batter with a few quick strokes. Stir remaining blueberries and walnuts (if desired)

2. Spoon batter into prepared muffin cups and sprinkle with remaining sugar. Bake 20-25 minutes or until cake tester comes out clean

3. Remove muffin tin to wire rack. Cook 5 minutes before removing from muffin cups; finish cooling on rack.
