˝ lb. Chorizo, removed from casing
˝ lb. Hot Italian Sausage, removed from casing
˝ lb. Chuck cut into bite-size pieces
1 lb. Hickory Smoked Bacon, diced
5 Habanero Peppers (you might want to use just one)
2 Scotch Bonnet Peppers
5 Jalapeno Peppers
2 Pablano Peppers
2 Banana Peppers
2 Anaheim Peppers
1 can Chipotle Peppers in Adobe Sauce
1 Large Onion
5 Cloves Garlic
1 bottle Negro Mordelo Beer
1 cup Quervo 1800 tequila
1 cup Wild Turkey
1 large can Tomato Sauce
1 can Rotel Extra Hot diced tomatoes
1 can Kidney Beans
1 can Black Beans
1 can Pinto Beans
1 can Great Northern Beans
1 can Garbanzo Beans
˝ bar Dark Bakers Chocolate
1/8 cup Cumin
1/8 cup Chili Powder
1/8 cup Basil
1/8 cup Oregano
Salt to taste
Pepper to taste

Directions:
Directions:
Add spices and liquid ingredients to an 8 quart pot. Slowly bring to a boil.
Dice the bacon and sauté until softened and the fat begins to render. Add the bacon and the bacon fat to the 8 quart pot. Brown the Chorizo, sausage and chuck in a large pan, drain and add to the pot. Slowly bring to a boil again.
Remove the caps, ends, and deseed peppers. Chop peppers (would recommend using plastic gloves). Peel and crush the garlic cloves. Drain the beans. Dice the onion. Add the peppers, garlic, beans, and onion to the pot. Reduce the heat and slowly bring to a boil with the lid only partially covering the pot.
Taste, adjust salt and pepper if necessary.
After about 1 hour, add the chocolate to the pot. Again, bring to a slow boil. Reduce the heat to a simmer and let cook for another 3 hours.
Service plan or over rice, with chocolate treats to ease the heat.

This is an expensive and FUN chili to make. I shared the recipe a local oncologist who was a candidate of mine in a search. Years later, when diagnosed with breast cancer, I contacted him for a second opinion. He remembered me because of the recipe and said he has made the chili every year for the Superbowl, but, had to cut back on the Habanero's)))!
