1/4 cup crumbled Gorgonzola
1 1/2 tsp. Dijon mustard
6 tbs. extra-virgin olive oil
1/8 tsp. salt
1/8 tsp. freshly ground black pepper

Directions:
Directions:
1. Put the cheese and mustard in a food processor or blender and blend until smooth.
2. Slowly add the olive oil through the feed tube in a thin steady stream and process until well blended. (Or mash the cheese and mustard together in a bowl with a fork. Slowly whisk in the oil, drop by drop, and whisk until smooth.)
3. Add the salt and pepper and mix well.
4. Transfer the dressing to a bottle and refrigerate. It will keep for up to 2 weeks.
