This recipe was sent to Kathy from Joe on April 12, 2007.

I don't really have a recipe.

Boil ham bone with some meat on it with garlic and bay leaves
If you don't have a ham bone use a couple of smoked ham hocks
after a couple of hours, remove bone hocks, let cool and remove meat and dice it

meantime you should soak whatever dried beans you are using -navy, northern, etc

place beans and meat pieces back in broth and cook another couple of hours
season to taste with salt and pepper

if stock doesn't thicken from bean starch make a simple water/flour paste and add but may need to re-season after this

at least that is how I remember making it

Personal Notes:
Personal Notes:
There was nothing better than dad's ham and beans and cornbread (Jiffy mix). It was always a tradition to have this meal on New Year's Day because it was thought to bring you luck throughout the New Year. The original tradition was actually black eyed beans and ham and not northern beans but I always remember the northern beans.
