1 1/2 lb. collard greens
bacon
2 smoked turkey wings
2 c. water
1/2 c. chopped onion
1/2 cup chopped green sweet pepper
1 tsp. sugar
1/4 tsp. salt
1/8 tsp. cayenne pepper
4 cloves garlic, minced
red wine vinegar, optional

Directions:
Directions:
Wash collards in cold water and drain. Remove stems and coarsely chop leaves. It should be about 6 cups. In a large saucepan, cook bacon and reserve drippings in saucepan. Drain bacon on paper towels and set aside. Add the rest of the ingredients except for the optional vinegar and bring to a boil. Add collards, reduce heat and simmer, covered for about 1 1//4 hours or until greens are tender. Remove from heat and remove turkey wings. Cover greens and keep warm. Remove meat from turkey, chop meat, and return to greens mixture along with crumbled cooked bacon. Heat through and serve with a slotted spoon and vinegar on the side if desired.
