Ingredients: Ingredients: Fresh whey from cheese using 2 gallons cow's milk, no more than 3 hours old 1-2 cups heavy cream

Directions:Pour whey into a large pot and bring to a boil; as the pot begins to boil scummy foam will appear on the surface of the whey–skim the foam off with a slotted spoon and transfer to a bowl, reserving for later. Let the whey boil gently uncovered until reduced to 75% of original volume–this may take anywhere from 6-12 hours. As the whey boils stir to prevent sticking. Add the foam and the whey will start to thicken. Add cream and allow whey to continue to thicken slightly. Transfer whey to a blender carefully. Blend on medium speed for around 1 minute–this will ensure a smoothe texture. Pour the mixture into pot and once again cook over low heat stirring occasionally. The mixture should be fudge-like when it is finished; transfer the pot to a sink full of cold water and stir until it is cool enough to pour into molds. Cover molds and store in the fridge. Cheese will keep for 4 weeks, or frozen for 6 months. |

Notes: I was tricked many times into thinking this was peanut butter. You know when you have fresh bread and butter with a dollop of PB on it. Oh my! it's wonderful. Believe when I tell you this is not. Ava and "the Brothers" as Barney and Harold were called loved this stuff.Yikes! "Caramel is the term most frequently associated with thisIcelandic cheese. The process of boiling a mixture of milk, cream, and whey for several hours allows for the proteins and fat to separate but also allows for the liquid to evaporate. As a result, what is left is a sticky mass of caramelized milk sugars which is in turn poured into molds and left to set." This comes from a website that describes the rancid stuff. Usually cut into blocks, mysuostur's flavor makes it ideal to serve with warm bread believe me it is not a treat. The active ingredient in this is "primost" and it is disgusting
