2 cups sifted all-purpose flour
1 tablespoon sugar
4 teaspoons baking powder
½ teaspoon salt
½ cup shortening
1 egg beaten
2/3 cup milk

Directions:
Directions:
Sift together dry ingredients; cut in shortening until mixture resembles coarse crumbs. Combine egg and milk; add to flour mixture all at once. Stir until dough follows fork around bowl.

Turn out on lightly floured board; knead gently with heel of hand about 20 strokes. (My Great Aunt said that it is very thin dough so she kneads in just enough flour to handle. She then kneads 20 times only – no more.) Roll dough to ¾ inch thickness. Dip two inch biscuit cutter in flour; cut straight through dough --- no twisting. Place on ungreased pan (3/4 inch apart for crusty biscuits, close together for soft sides.) If you want, you may chill dough 1 to 3 hours.
