1.5 lbs. Ground beef 1 med. Onion
1 – 28 oz. Can of tomatoes (Herb & Spice) 4 carrots (chopped)
parsley 1 bay leaf
0.5 tsp thyme pepper to taste
1 can tomato soup 2 cans OXO beef liquid
3 cups water 8 T barley

Directions:
Brown meat and onions. Drain fat. Combine in large pot. Simmer covered for 2 hours or all day. I put all the ingredients in my slow cooker and let it cook on low for 8-9 hours. Put all the vegetables near the top, or they get too soggy.

NOTE: The recipe actually calls for 5 cups of water and 4 heaping tsp of OXO beef. I always throw in at least 2 cans of OXO and then 3 cups of water. I also don’t put in the bay leaf or thyme, and instead I like to put in fresh dill and parsley.
