1 small spaghetti squash (1 1/2 lbs)
3/4 cup sugar
3 eggs
1/4 cup milk
1 Tbsp flour
1 1/2 tsps vanilla
pinch of salt
1 unbaked 9" pie crust

Directions:
Directions:
Preheat oven to 300º F
Cut squash in half lengthwise and scoop out seeds. Place halves cut side up in a microwave proof dish and cook for 10 mins until squash gives when pressed and flesh is tender. Cool.
In a large bowl, whisk together the sugar, eggs, milk, flour, vanilla and salt.
Using a fork, shred the spaghetti squash into "noodles".
Arrange squash in the bottom of the pie crust. Pour sugar mixture over top and bake 40 mins. or until filling is set. Let cool and serve.
