3 tablespoons sugar
2 teaspoons Celtic salt
1/2 cup apple cider vinegar
1 1/2 teaspoons celery seeds
1 1/2 teaspoons mustard seeds
1/4 teaspoon fresh ground pepper
6 large bell peppers (red, orange, and/or yellow), shredded
2 stalks celery, finely chopped
4 large green onions, chopped
1/2 head green cabbage, shredded
3 tablespoons Dijon mustard
1/2 cup mayonnaise

Directions:
Directions:
Whisk together sugar, salt and vinegar in large bowl until dissolved. Add celery seeds, mustard seeds, pepper, bell peppers, celery, onions, and cabbage; toss to make sure everything is combined and coated well. Refrigerate at least 1 hour to allow the flavors to develop.

Mix mustard and mayonnaise together and add to slaw; toss to make sure everything is combined and coated well. Refrigerate until ready to serve.
