1 cup sugar
1 whole egg plus 1 egg white
1/3 cup applesauce sweetened, unsweetened or cinnamon.
2 cups flour
2 teaspoons baking powder
1/2 cup fat free milk
1/2 teaspoon salt
1/2 teaspoon vanilla flavoring
1 1/2 cups of Maine Wild Blueberry's or any blueberries that are available.

Directions:
Directions:
Put sugar, whole egg and egg white in a bowl, mix thoroughly. This is important to mix air into the cake to keep it light. Add the flour, baking powder, and apple sauce, vanilla and salt. This mixture will be a little dry. Add the milk, mix again thoroughly.
Stir in the blueberries. Use a round or square cake pan, either 8 or 9 inch, sprayed with non stick baking spray. You may use butter rubbed in pan, dusted with flour. Bake at 325º for about 30- 35 min. Every oven is different. Remove when cake springs back to touch. Very important not to over bake, as it will be dry. After removing, immediately spread butter on top of cake, sprinkle with cinnamon sugar.
