2 lbs butternut squash, peeled and cut into chunks
3 cloves of garlic, minced
4 tbsp butter, melted
Pinch of salt, pinch of black pepper
Fresh parsley, finely chopped
1/2 cup shredded Parmesan cheese

Directions:
Directions:
Pre-heat oven to 400º
In a large bowl, combine melted butter, garlic, salt, pepper and parsley.
Add cubed squash and toss to coat
Spread in a single layer onto a baking sheet
Roast for about 40 minutes or until tops are light brown and squash is tender
Turn off heat, sprinkle squash with Parmesan cheese and let sit in warm oven until cheese is melted.
