2/3 cup vegetable oil
1 cup sugar
1 egg
1/4 cup molasses
2 cups all-purpose flour
1/2 tsp. salt
2 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. ground ginger
1/4 cup sugar

Directions:
Directions:
Combine oil and 1 cup sugar in a large mixing bowl; add egg and beat well. Stir in molasses. Combine flour, salt, soda, cinnamon, and ginger; add to molasses mixture, stirring to mix. Roll dough into 1-inch balls; roll each in remaining 1/4 cup sugar. Place 2 inches apart on greased cookie sheets. Bake at 350º for 10 to 12 minutes or until lightly browned. Remove to wire rack to cool.

Yield: About 4 dozen

This recipe was printed in Country Living magazine in April 1981. My grandmother, Martha Adams Rhyne, used to make gingerbread men from this recipe for me when I was little.
