2 egg whites
2 egg yolks
1 2/3 c. milk
1/4 c. melted shortening or oil
2 c. sifted flour
1 T. sugar
1/2 t. salt
3 t. baking powder

Directions:
Directions:
Place egg whites in mixing bowl. Beat at high speed until stiff but not dry; set aside. Place egg yolks, milk and shortening in small mixing bowl. Beat at medium speed until blended together. Combine dry ingredients. Add to egg yolk mixture and beat at medium speed, scraping sides and bottom of bowl with a rubber scraper until blended. Remove from mixer and fold in the egg whites. Preheat waffle iron at medium. Spread 7/8 c. of batter evenly over the grids. Bake until the light goes out
