3 c. oatmeal
1/2 c. brown sugar (can use brown sugar Splenda)
2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. salt
1/2 c. applesauce
1 tsp. vanilla
2 eggs
1 c. milk (skim is fine!)
1/2 to 1 C. raisins or blueberries (or dried cherries or chopped apples) -- I usually use a combo

Preheat oven to 350 degrees. Mix the dry ingredients in one bowl. Mix the wet ingredients in another bowl. Stir the wet and dry ingredients together and add the fruit. Spread in a 9x9 pan, lightly sprayed with nonstick spray. Bake 20-30 minutes. Leftovers can be reheated in the microwave.
