1 3/4 c. milk
1/4 c. white vinegar
1 c. all-purpose flour
1 c. whole wheat pastry flour
1/4 c. sugar
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1-2 eggs
1/4 c. melted butter (or vegetable oil)
1 1/2 tsp. vanilla
Chocolate chips (opt.)

Directions:
Directions:
Combine milk and vinegar in a small bowl and set aside for 10 minutes to sour. Don't skip this step! (And don't worry, you will not taste any vinegar.)

Meanwhile, combine dry ingredients in a medium bowl. Melt the butter in a Pyrex measuring cup in the microwave, then whisk in eggs and vanilla. Whisk with the soured milk. Pour into dry ingredients and whisk until most lumps are gone, but do not overbeat. Batter will be thick. (You can add a little extra milk for a thinner batter, then pancakes will not be as tall.)

Let batter sit undisturbed for about 10 minutes for the vinegar and baking soda to create bubbles.
DO NOT STIR again!

When the griddle is preheated to about 325º F and sprayed/buttered, gently dip out batter with a measuring cup--don't pour it. As usual, wait until you see some dry edges on the burst bubbles before you flip the pancakes. Serves 4-5.

We usually add a handful of chocolate chips in for everyone's last pancake.
