1 chicken, 3 1/2 lbs, cut up
3 Tbsp olive oil
5 garlic cloves, chopped
3 yellow onions, chopped
3 cups fresh or 28 oz can tomatoes, coarsely chopped
6 oz jar stuffed green olives, drained (salad olives)
Salt and freshly ground pepper, to taste
1 Tbsp oregano
1 cup dry wine (red & white work equally well)
1 cup chicken broth
1/4 tsp Bijol seasoning (or a pinch of saffron)
1-2 bay leaves

Add the olive oil to a large Dutch oven and brown the chicken in batches. Remove and keep warm.

Drain most of the oil from the pan. Sauté the onion and garlic in the remaining oil until limp. Add the tomatoes and olives and sauté until tomatoes are soft. Add the wine and reduce briefly. Add chicken stock, Bijol, bay leaves, and oregano. Season with salt & pepper (olives are salty, so go lightly).

Return chicken to pan, cover and simmer until the chicken is tender and cooked through, about 30 minutes.
