2 cups graham cracker crumbs
1/2 cup sugar
1/2 tsp. ginger
1/2 tsp. cinnamon
1/2 cup butter

Pumpkin filling
6 eggs, separated
1 1/2 lbs. cream cheese
1 1/3 cups sugar
1/4 tsp. salt
2 cups canned pumpkin
3 Tbl. molasses
3 Tbl. amaretto
2 tsp. ginger
2 tsp. cinnamon
1 cup heavy cream

Topping
1 cup heavy cream
Amaretto to taste

Preheat oven to 350ºF..
Crust; Combine cracker crumbs,sugar, cinnamon and melted butter. Line 2 9" pie pans,pressing firmly.

FIlling; Beat egg whites until stiff peaks form; set aside. Combine all other ingredients and blend until smooth. Fold into the beaten egg whites. Pour into the two shells,dividing evenly. Bake until set in center,approximately 25 minutes.

When ready to serve,whip cream until stiff peaks form. Add Amaretto to taste. Slice the pie and garnish with a dollop of whipped cream.

Kind of a misleading title, it is really more like a light cheesecake than a pie, but it is very good...and easy. Came from my "Settings" cookbook....
