6 bacon slices, chopped
1/2 small onion, chopped fine
1 teaspoon minced garlic
1/4 cup dry white wine
1 cup heavy (whipping) cream
1 teaspoon chopped fresh thyme
1 tablespoon extra-virgin olive oil
1 lb. sea scallops, washed, cleaned, and dried thoroughly
Sea salt
Freshly ground black pepper

1. In a saucepan over medium-high heat, cook the bacon, stirring, until it is crispy, about 5 minutes. Using a slotted spoon, remove the cooked bacon to a plate

2. Saute the onions and garlic in the bacon fat until softened, about 3 minutes

3. Add the white wine, and de-glaze the saucepan, stirring to scrape up the browned bits from the bottom.

4. Whisk in the heavy cream and reserved bacon, and bring the mixture to a simmer

5. Simmer until the sauce thickens about 5 minutes

6. Remove the sauce from the heat, and stir in the thyme. Set aside.

7. In the large nonstick skillet over medium-high heat, heat the olive oil. Season the scallops with salt and pepper

8. Cook the scallops undisturbed until the bottoms are browned and crisp, about 3 minutes

9. Using tongs, carefully turn the scallops, and sear the other side until they are also browned and crisped, 3 minutes longer

10. Transfer the seared scallops to a plate, and serve with the sauce
