1 1/2 cups boiling water
1 cup quick or old fashioned oats
5 tablespoons butter
1 cup brown sugar
1 cup granulated sugar
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups all-purpose flour
1 teaspoon cinnamon
1/4 teaspoon nutmeg

Topping (optional):
1/2 cup brown sugar
3/4 cup coconut, flaked
1 cup nuts, chopped
3 tablespoons butter
1/4 cup milk

In small bowl, pour boiling water over oats and mix well. Set aside.

In large bowl, beat butter and sugars until light and fluffy. Beat in eggs and vanilla. Stir in soaked oats. Sift together dry ingredients and stir into oatmeal mixture. Pour into a greased and floured 13” x 9” oblong cake pan. Bake at 350 ºF for 35 minutes or until a toothpick inserted near the center comes out clean. While cake is cooling prepare the topping.

Topping:
In a medium pan combine all ingredients. Heat until bubbly. Spread over top of cake.
