1 tablespoon olive oil
6 red bell peppers, seeded, finely chopped
2 carrots, finely chopped
2 sweet onions, finely chopped
2 celery ribs, finely chopped
4 cloves garlic, finely chopped
8 cups chicken broth
1 teaspoon thyme
1/4 teaspoon cayenne pepper
1/4 teaspoon red pepper flakes
1 teaspoon salt
1/2 teaspoon pepper
4 cups rice, cooked
Parmesan cheese

Directions:
Directions:
Add oil, bell peppers, carrots, onions, celery and garlic to large pot. Cook and stir vegetables until soft for about 10 minutes. Stir in remaining ingredients and bring to a boil. Reduce heat, cover and simmer on low for 30 minutes.

Dip into bowl. Add 1/2 cup rice. Top with cheese.
