1 c long grain rice
1 T oil
1/2 onion, sliced or diced
red bell pepper, sliced
carrots, sliced
1-2 tspThai curry paste (depends on how spicy you want it)
1/2 lb cooked shrimp
1 can (14.5 oz) coconut milk
1 c torn, fresh basil leaves (optional)
2 T lime juice

Directions:
Directions:
Cook rice according to package. Heat oil in large skillet. Add onion, red bell pepper, and carrots. Cook tossing frequently until they begin to soften (about 7 minutes). Add curry paste to veggies in skillet. Cook,. stirring & scraping bottom of skillet until paste is slightly darkened, 3-4 minutes. Add shrimp and coconut milk. Simmer until veggies are tender and sauce slightly thickened, 5-8 minutes. Add basil and lime juice. Season with salt and stir to combine. Serve over rice. I like to serve in deep bowls rather than plate.
