DAD’S ROAST TURKEY: (about 12-17 pound frozen bird)

Preheat oven to 450 degrees.

You will roast the turkey for 15 minutes for each pound of turkey – to a temperature of a little over 160 degrees. You will insert the thermometer in the center of the breast. Example: for a sixteen pound bird, it will take 4 hours of COOKING time and you will need to let it sit out and rest for another 30 minutes!

Defrost the turkey by putting in a cooler in the garage about three days in advance. Prop the cooler lid about ¼ inch open. Watch it to make sure it is defrosting. You can prop lid open more if too slow in defrosting. You can also do it in the fridge and it takes even more time and a lot of space but that is the safest way.

Remove the giblet bag and neck – loose parts. Wash, rinse and dry turkey in and out with paper towels.

Fold wings to tuck under the turkey. Rub outside and inside with vegetable oil and salt with your hands. About 2 T. of salt with about 3 T. of oil. Just pour the oil and salt into your hands and massage the bird in and out.

If stuffing, place stuffing at ROOM TEMPERATURE into the large cavity and also a little pile under the skin flap in the smaller end of the turkey. Do not do in advance of putting bird in oven. Do right before you roast. Do not pack too tightly....just put some in loosely.

Use a aluminum disposable roaster or place on a rack in a quality roasting pan. Place bird in pan. Add 2 T. vegetable oil to bottom of roasting pan.

Put bird in oven for 30 min at 450 to brown it to start. Then reduce the temp to 325 and roast until temp hits a bit over 160 (162 if you have a digitial thermo). Baste the turkey every 30 minutes with the juices from the pan. When temp hits 160, remove roast from oven. Tent the bird with aluminum foil and let rest for 30 minutes while making gravy!
After thirty minutes, remove stuffing and carve!
