Ingredients: 5 pounds red potatoes – smaller one 1 poundbacon cut into ¼ inch pieces with grease 1-2 medium sweet white onions (to taste) Apple cider vinegar – about ¼ cup Brown ( I use) or white sugar – about ¼ cup Water to texture Salt and pepper to taste

Directions:Wash potatoes and bring to simmer until 90% cooked but still a bit firm. Drain and cool a bit. (Can be made in advance and totally cooled and refrigerated in ziplocs a day or two in advance). Slice into ¼ inch slices; set aside.Make ‘sauce’. Fry bacon pieces until brown and pretty crisp. Take out pieces and keep grease. Set pieces aside.In a large pot, add to warm (not hot) grease....vinegar, sugar, and ground pepper. Make a warm vinaigrette. Put the potatoes into the warm vinaigrette. Warm and carefully toss to warm and mix. Add the bacon pieces to warm a bit and season the salad. Add warm water if needed, extra salt and pepper to taste. |

Notes: Many wonderful memories of OktoberFiesta on Wednesday of Fiesta week where we 'found' Germans and invited them to our German party. All we needed were a few Germans! The party grew every year until the last year where we had one hundred people.
