4 C. fresh, frozen or canned black -eyed peas
1 red onion
1/2 red bell pepper; cored seeded and diced
1/4 jalapeno seeded and diced OPTIONAL
1 C. grated Parmesan cheese
2 large eggs
2 T. all purpose flour
2 garlic cloves minced ( or garlic powder to equate)
1 T. chopped fresh oregano ( or 1 tsp. dried)
1 tsp. salt
1 tsp. freshly ground black pepper
1/4 C. chopped parsley
2 1/2 C. fresh bread crumbs
1/3 C. canola or safflower oil

Cook peas until tender but still hold their shape (canned- use directly); fresh take 30-40 min
Preheat oven to 300 degrees
Drain peas and divide in half. Mix 1/2 with onion, peppers, Parmesan, eggs, flour, garlic, oregano, salt, pepper, parsley and 1 C. of breadcrumbs. MASH with potato masher until well blended. Fold in reserved peas and mix thoroughly. Scoop out 1/2 c.aliquots and form into 3 inch cakes, 1/2 inch thick. (I moisten my hands for this step). Repeat to make 9-10 cakes. Dip each cake into remaining bread crumbs (may need more)-shake off excess.
Heat 1/2 oil in non-stick skillet over med high heat. Brown cakes for 4-5 min per side (do not crowd-6-8 at a time) until crisp; note turn each only once to keep in tact. Drain on paper towels. Place on baking sheet in oven while cooking remaining cakes
Serve with your favorite Salsa, homemade chili sauce or pepper jelly
