16 oz ground beef chuck (or I use 1/3 chuck, 1/3 gr pork, 1/3 gr veal)
1 ½ c. finely chopped onions
1 c. quick cooking oats or dry bread crumbs (I usually use my homemade bread crumbs but both work well)
2/3 c. catsup
2/3 c. chopped fresh parsley (half amount of freeze dried works too)
3 large eggs, lightly beaten
1 t. dried thyme (more fresh)
1 t. salt
¼ t. black pepper

Preheat oven to 350 F. Lightly grease loaf pan. Combine ingredients in bowl. Do not over mix.

Bake until meat is firm and has shrunken a bit from the sides. About 1-1 ¼ hours. Pour off excess fat and let stand 15 min before serving. If using thermometer, recipe says 160 F. We did about 145 F.

If baking in pumpkin, cut three small drain holes in the bottom of the pumpkin. to drain off the grease.

Leftovers:

Cut meatloaf into thick slices. Spread with softened butter on both sides. Coat with cajun seasoning. Fry until warm and browned.

I love to bake this recipe in a hollowed out pumpkin shell in the Fall. Slice and serve with the baked pumpkin. Brush the outside of the shell with oil to glisten. We love to 'blacken' the leftovers in Cajun seasoning in a cast iron skillet.
