1/2 c. butter
1 c. DARK brown sugar
3 eggs
1 c. white sugar
5 T. pineapple juice from can
1 c. flour
1 tsp. baking powder
1 can of pineapple rings
maraschino cherries

Directions:
Directions:
Preheat oven to 375 degrees. Grease an 8" cast iron skillet. Put on burner on low -- add 1/2 cup butter, 1 cup DARK brown sugar, When melted turn off and add pineapple rings and cherries in the center of each ring. For cake batter: Three slightly beaten eggs, add 1 cup white sugar, 5 T. pineapple juice from can. Measure 1 c. flour and 1 tsp. Baking powder. Sift and add to egg/sugar mixture. Do not over mix. Pour cake on to pan. Bake 30-35 minutes until cake is done and bottom is nice and brown. Remove from oven, top with serving plate and flip over to remove cake so pineapple is on the top.
Enjoy warm if you can but great the next am with coffee too!

The kids always said I did not make this as well as Gram. I sure tried, but apparently my Mom had the 'knack'. That being said, I know I am not a baker. My brother and I sure enjoyed this cake. I remember Mom making it often in Minocqua. You must have a well-seasoned 8 inch cast iron skillet! We still have my grandmother's!
