8-10 bone-in, skin-on chicken thighs (can use breasts as well; need to adjust baking time)
1/2 c. mayo
spices to taste (Italian, Cajun, ghost pepper, tarragon)
1-2 cups of panko bread crumbs
freshly-grated parmesan cheese
freshly-chopped basil

Wash and dry chicken thoroughly. Mix whatever spices you choose into mayo. For example, when I make an Italian version, I put in garlic powder, onion powder and cheese into the mayo. Spread thin layer of mayo all over chicken. Mix panko crumbs with grated parmesan cheese. Add freshly-ground pepper to crumbs. Roll the chicken in the seasoned crumbs. Bake at 375º or 400º oven until done and brown. About 30-40 minutes for average thighs. Very crispy and moist.
