1/4 tsp. allspice
1 tsp. nutmeg
4 tsp. ground cinnamon
1 tsp. salt
1 1/2 c. sugar
1 tsp. ground ginger
1/2 tsp. ground cloves
4 large eggs
1 28 oz. canned pumpkin for two pies
2 12 oz. cans evaporated milk
2 unbaked deep dish pie shells

Mix dry ingredients. Beat the eggs. Stir in pumpkin and milk. Gradually stir in evaporated milk. Bake in preheated 425º oven for 15 minutes. Reduce to 350º and bake 40-50 minutes until knife inserted comes out clean. Cool on rack for two hours. Serve immediately or refrigerate.
