3 c. sushi rice uncooked rice - make rice the day before or in morning
2 T. minced garlic
1 1/2 T. minced ginger
1/2 c. diced Maui onion
3-4 T. soy sauce
3 large eggs
1/2 c. frozen peas
1 c. diced cooked meat
salt to taste

Directions:
To cook rice, wash and rinse until water runs clear. Cook in 4 cups water. Spread out, fluff and cool. Heat oil in large skillet over medium heat. Add onion until starting to get translucent. Add garlic until starting to brown. Add ginger and cook 2 minutes. Add meat and rice until warm. Add 3 eggs on top and scramble by stirring into rice. Add salt to taste. Add peas. Serve with soy and or Huli-Huli sauce. Garnish with scallions.
