For cookies:
1 c. powdered sugar
2 1/2 oz. flour, sifted
add 3 egg whites beaten
2 oz. melted butter
1/2 tsp. vanilla extract

For pastry cream:
1 c. sweetened condensed milk
Zest of 3 limes
Juice of 6 key limes
3 egg yolks

Directions:
Directions:
Bake the lacey cookies at 350º 8-10 minutes until browned. Cool on cookie rack.

Bake the pastry cream 325º for 20 minutes. Cool then chill until firm. Plate by alternating cookie/cream/cookie/cream. Garnish with lime slices and whipped cream and lime zest.
