6-7 favorite pie apples
1/2 c. sugar
1 tsp. fresh lemon juice

4 T. flour
1 1/2 tsp. cinnamon
1/8 tsp. nutmeg
1/4 tsp. salt
1/4 c. additional sugar
1/8 c. additional flour
corn syrup to coat bottom crust
egg white/water mixture

Peel, core apples, slice thickly (1/2 inch. Sprinkle with 1/2 c. sugar and 1 T. lemon juice. Put in strainer over a bowl, let sit for 30 minutes to one hour. Take drippings and reduce over medium heat to approximately 2 T. sauce then let cool.
Mix apples with flour, cinnamon, nutmeg, salt, additional sugar. Put apple mixture in bottom pie crust after painting it with corn syrup. Pour apple drippings over apples. Dot with about 2 T. butter. Place top crust. Brush top with egg white and water mixture then sprinkle with sugar. Bake at 400 degree oven until apples are tender and crust is golden brown. About 40 minutes.

Ashley's contribution to holiday dinners often with a lattice crust. The handwritten version is dated December 25, 2009. The corn syrup keeps the bottom crust from becoming soggy. We use it on the pumpkin pie as well.
