1 lb. large shrimp peeled and deveined
3 ounces Hot Portuguese Sausage – cooked in advance ( or cooked chorizo)
½ Maui onion
1 can (12 oz.) pure Coconut milk
2 T green curry paste (in a jar in Asian aisle)
1 medium jalapeno pepper
1 T soy sauce
1 cup jasmine rice uncooked
Cilantro for garnish
2 limes cut into wedges

Directions:
Cook rice in 1.5 cups water
Cut onion into half rings ½ wide and caramelize – set aside
Slice jalapeno into ¼ inch slices – remove seeds and veins if you don’t want it as spicy
Put can of coconut milk and curry in a sauce pan, warm and stir
Heat cooked sausage then cut into ¼ thick slices
Add onion, soy sauce, sausage and jalapeno to sauce
In a large pan, sauté shrimp quickly until pink ~ 1 min a side
Add shrimp to sauce
Serve in bowls with rice, adding squirt of lime and garnish with cilantro
