1 T. plus 1 t. dry instant yeast
3 c. all purpose or bread flour (sifted and then measured) or 13 oz.
1 + 3T (9.5 Oz) cup milk at room temperature
I 1/2 t. salt

The dough, made with milk is light and and tender. Yield: Two 10 inch crusts or one 14 inch crust:

BY HAND METHOD: Stir the milk ,yeast and half the flour into the sponge. Add the salt, then work in the remaining flour. On a floured board, knead the dough until is smooth and resists when you pull it.

BY STAND MIXER: Place the milk, yeast and flour and salt in the mixer bowl. Mix until combined on low. Then mix for about 8 min on medium until the dough seems stringy when pulled,

FOOD PROCESSOR METHOD: Place yeast and flour and salt in the processor bowl with the metal knife. Process 5 seconds. With the machine running, pour in the milk and process until the dough seems stringy when pulled, about 90 seconds.

Bake in highest oven temperature possible.

FOR TOPPINGS; Use whole milk, low moisture mozzarella. Dot the crust with the cheese first before adding dots of sauce to 'ground' the bottom layer Top with whatever you want. Finally dot with fresh mozzarella cheese.
