"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Directions:
Process: (I use a stand mixer but you can do by hand -(makes 6 8-inch round waffles)
Melt butter in pan remove from heat and then add milk.Combine the flour, sugar, salt and yeast in a bowl. Whisk together. Add milk and butter mixture into the flour mixture then whisk until smooth. In a small bowl, whisk together the eggs and vanilla. Add the egg mixture into the batter then whisk until incorporated and smooth. Scrape down the edge of the bowl, cover with plastic wrap and put in the refrigerator for at least 12 hours and up to 48 hours. You can freeze the batter after it has risen the minimum 12 hours. To defrost, put on the counter and wait until it's melted and the batter starts to bubble again. Then use or put back into the refrigerator until ready to use.

Cooking: Remove from the refrigerator, stir the batter thoroughly. Make as per your waffle maker instructions.
