One head of cauliflower
Olive oil to lightly coat
2 cloves minced garlic
salt and pepper to taste
Parmesan cheese to taste

***can use any vegetables or a mix -- asparagus, zucchini, fennel, peppers, Brussels sprouts, onions and vary the spices to complement this main dish.

Directions:
Directions:
Toss all ingredients except cheese in a bowl with oil. Bake at 375-400º until tender yet brown. Top with cheese and serve.

This 'recipe' is our only veggie submission.

Growing up, Grandpa didn't want most of them except from his garden in the summer. Stephen didn't like them at all. For Mom and me, they were mostly from a can in the winter.

As Campbells, we weren't super creative in the vegetable department -- steamed, roasted, grilled or fresh. We served them simply and often but without extraordinary, unique recipes.
