2 sticks butter or margarine
5 large eggs
1 cup sugar
1 3/4 cups plain white all purpose flour
1/2 tsp. baking powder
1/4 oz. lemon flavoring
1/4 oz. vanilla flavoring
1 lb. glazed cherries, chopped
1 lb. glazed pineapple, chopped
1 lb. pecans, chopped (4 cups)

Grease cake pan. Cream softened butter with sugar; add eggs and mix well. Fold in 1 cup flour sifted with the baking powder, then add flavoring. Take the remaining 3/4 cup flour and stir in to cherries, pineapple and nuts. Fold the flour mixture in to the fruit/nuts. Pour in to pan.

Place in a cold oven set at 250 degrees, cook 3 hours. Cool approximately 30 minutes in pan before turning out to finish cooling. Makes 1 large size tube cake or 2 medium loaf pans or 3 smaller loaf pans. I usually place a sheet of waxed paper in the bottom of greased pan to ensure that it doesn't stick.
