Ingredients: 1/4 cup butter, melted 3/4 cup milk 1 egg 2 Tbsp white granulated sugar 1 cup all -purpose flour 1/4 tsp baking powder 1 tsp vanilla 1/8 tsp salt
Corn oil to fill large pan about 2 inches deep Powdered sugar for dusting finished product

Directions:Beat together melted butter, milk, egg and vanilla in a blender or with mixer until well combined..
Combine the flour, baking powder, sugar and salt in a large bowl. Gradually stir in the liquid mixture.
Beat the batter with an electric mixer for 1 minute, or until it's light and frothy.
Refrigerate the batter for 1 hour.
Use deep fryer, turkey fryer or other oil tank
Heat corn oil to 350º
Place waffle iron in hot oil for at least one minute to heat iron.
Tap the excess oil off the iron on a dishtowel or paper towel.
Dip iron in batter to within 1/8 inch of the top of the iron (don't go over the top of the iron! Hold for 4 seconds and then let any excess drip off.
Put it in the oil about 1/4 inch until the waffle flares away from the iron (allowing the oil to get between the waffle and iron) then submerge completely in oil (do not let it sit on the bottom) until the bubbling almost stops. Remove from oil and take waffle off of the iron. Do this by setting on a paper towel and slipping a table knife between iron and waffle and gently pulling iron out of waffle. Coat with sifted powdered sugar
Dip iron into oil to heat again and repeat the above steps. *If the batter will not stick to the iron, your iron may not be hot enough or your batter may be too thick. If batter is too thick, just add a bit of water. |

Notes: Hints: you can add more vanilla to the batter for stronger flavor. You can also add some cinnamon. Or, swap out lemon flavoring for the vanilla. When you dust with confectioner's sugar, you can add cinnamon there also. Make sure you stir the batter frequently during the process so that it stays thick. If it turns out soggy, your oil may not be hot enough or you aren't frying long enough. Also, make sure you don't let them cool on their back--the oil needs to drain off the edges. Lots of blisters on your waffles? You over-beat your eggs. Is the waffle falling off the iron while in the oil? You aren't putting your iron deep enough into the oil. Add more oil to the fryer or place lower in the fryer, but don't hit the bottom.
Don't have a waffle iron? You can buy them online! Look up county fair waffle iron or French waffle iron.
