Ingredients:  
1 cup onion, chopped
2 stalks celery, finely chopped
1 can sliced mushrooms
1/2 green pepper, chopped
1-4 oz can pimentos, finely chopped
3 eggs, well beaten
4 cups cooked rice

Directions:
Directions:
Melt butter and saute' all vegetables until tender. Stir in pimentos. Add drained rice, 1 cup at a time. In a skillet, scramble 3 well beaten eggs until dry and somewhat separate. Stir into rice mixture. Place in casserole for baking.

Bake at 350 degrees for 30 minutes
