1 tube Pillsbury Chocolate Chip Cookie Dough
8-ounce package cream cheese
2/3 large tub Cool Whip
1/2 cup sugar
1 teaspoon vanilla
1 can crushed pineapple, drained
1 can mandarin oranges
2 bananas
1 pint strawberries
1 can shredded coconut
1/2 cup chopped nuts
6-ounce package semisweet chocolate chips (I like to use the miniature ones)

Directions:

Slice cookie dough into 1/8-inch circles. Place on greased pizza pan with sides touching and mash together. Bake at 350 degrees for 8-10 minutes or until done. Set aside to cool.

Mix cream cheese, Cool Whip, sugar and vanilla. Spread on the cooled cookie crust. Put crushed pineapple on top of the cream cheese layer. Slice bananas and place on top of pineapple. Next, layer the mandarin oranges and strawberries. Sprinkle with coconut, nuts and chocolate chips. Refrigerate.

This was one of the first recipes I tried when I started work at Carolina Telephone right out of college and lived on my own for the first time. It was often requested at work pot-lucks and once a coworker paid me to make 5 of them for a cook-out she was having. You can add different fruit (kiwi, blueberries, etc.) or leave off the toppings that you don’t like.
