1 lb ground beef
2 small zucchini (unpeeled) diced
1 small onion finely chopped
2 cups peeled tomatoes raw or canned, course chopped
1/2 cup instant rice uncooked
5 slices American cheese
salt and pepper to taste

Directions:
Directions:
Brown ground beef, season with salt & pepper and transfer to a bowl.
In same frying pan, saute zucchini, onions and tomatoes in a pat of butter or olive oil. Also season to taste.
Grease a casserole dish and assemble layers
1st layer- 1/2 of zucchini mixture
2nd layer- rice
3rd layer- ground beef
4th layer- rest of zucchini mixture
Bake covered at 350 for 45 minutes to an hour.
In last 10 minutes, put slices of cheese over top and leave uncovered.

Can use any good melting cheese instead of American. Cheddar, Mozzarella, Swiss or Gouda are all good. Can sprinkle Parmesan or Romano after it's done.
