1 box Jiffy cornbread
1/3 c. milk
1 egg
1 small can diced green chilis
1 can cream corn
1 lb. ground beef
1 tsp. cumin
1 tsp. chili powder
1/4 tsp. salt
1/4 tsp. pepper
1 1/4 c. enchilada sauce
2 c. shredded cheese

Directions:

Whisk Jiffy, milk and egg. Fold in chilis and corn. Pour into a cast iron skillet. Bake at 400 degrees for 20 - 25 minutes.

Combine beef and spices in skillet and saute over medium heat for about 10 min.

Once cornbread is done baking reduce oven to 350 degrees, poke holes in the cornbread and pour enchilada sauce over it. Top with ground beef mixture and cheddar cheese. Cover with foil and bake for 20 min. Remove foil and bake until cheese begins to brown (5 min.)
