2 Lbs. Hamburger
1 large onion chopped
1 Carton of chopped Hatch green chili (hot or mild depending on your taste)
5 medium sized potatoes peeled and cut in bite size pieces.
Salt and pepper to taste

Directions:
Directions:
Brown hamburger in stock pot. Season with salt and pepper. Add onion and chili and cook until onion is translucent. Add potatoes and enough water to cover by about 1 inch. Cook until potatoes are tender and soup thickens slightly.

Mike likes his served with cornbread but it is also great with tortillas.
