1 cup sugar
1/2 cup light Karo syrup
1/4 tsp salt
1/4 cup water
1-1/2 cups salted cocktail or Spanish peanuts
2 Tbsp butter
1 tsp baking soda


Directions:
Directions:
Place parchment paper on large cookie sheet. Lightly grease with butter and set aside. In a heavy 2 qt saucepan, over medium heat, bring to a boil sugar, corn syrup, salt and water. Stir until dissolved. Set candy thermometer in place and continue cooking. Stir constantly until temperature reaches 280º, about 20 minutes. Add peanuts and continue cooking until mixture reaches 300º. It will not take long to get from 280º to 300º, so do not walk away. Remove from heat and immediately stir in the butter, vanilla, and baking soda. Quickly pour onto the greased baking sheet and smooth to 1/4" thickness. Brittle will begin to harden as soon as it's poured from the pot, so work quickly.
